Extra virgin olive oil is an oil obtained by mechanically pressing olives, without the use of chemicals. It is the most prized of olive oils, with a fruity taste and very low acidity (less than 0.8%). Rich in antioxidants and good fats, it is a pillar of the Mediterranean diet.
